I struggle for new ideas to feed my hungry kids for lunch day after day.

At least during the summer, I don’t have to worry about packing lunchboxes. But when 11:30 rolls around and everyone starts to get hungry, it’s nice to have a plan in mind. Sometimes I need easy but not the usual peanut butter and jelly, quesadillas, fruit/veggies or leftover mac and cheese.

We always have tortillas and pinwheels are so easy but so different from the same old sandwich. My daughter calls these turkey roll-ups and they are one of her favorite lunches.

I like to use a deli turkey with no added nitrates or nitrites to be just a little bit healthier. You could also use ham for a ham and cheese pinwheel.

During the school year, I pack these in my kids’ lunchboxes and they hold up really well. You can make these the night before and refrigerate.

Turkey and Cheese Pinwheels

Ingredients

  • 2 eight-inch whole-wheat tortillas
  • 2 tbsp. cream cheese
  • 2 slices turkey breast
  • 2 slices cheddar cheese, or your favorite cheese
  • 1 small tomato, thinly sliced (optional)

Instructions
 

  • Spread 1 tablespoon of cream cheese onto each tortilla, spreading it all the way to the edges. Place turkey, cheese, and tomato slices on top.
  • Tightly roll up each tortilla and then use a sharp serrated knife to cut into 1-inch-thick round slices.
