You can skip the dredging step and just brown the chicken pieces as is before adding the sauce. Or, you could try mixing a little water with the cornstarch instead of eggs. I haven’t tested the recipe that way, so can’t say for sure how it would turn out.

No, you won’t need to drain off any oil. Most of the oil will be absorbed as the chicken cooks. I hope you enjoy the recipe!

These taste great. I used boneless thighs because that was what I had. This tasted every bit as good as anything I would get in a Chinese restaurant. I highly recommend!
