Tips For Cooking Boneless Skinless Chicken Breasts

  • Pound it! Use a meat mallet (or rolling pin) to pound boneless skinless chicken breasts to an even thickness before cooking. This helps them to cook evenly and makes the chicken especially tender. (Just put the chicken breasts in a large zip-top bag or between two sheets of parchment paper or plastic wrap before pounding to minimize mess.)
  • Chicken temperature: Chicken breast should be cooked to a minimum internal temperature of 165°F, as measured with an instant read thermometer in the thickest part of the meat. Using a thermometer is the most accurate way to tell when chicken is done, since the cook time will depend on the size and thickness of the chicken breast, as well as on the cooking method.
  • Don’t overcook. Overcooking leads to dry, tough chicken.
  • Meal prep staple. Boneless chicken breasts are perfect for meal prep and make ahead meals. Try these recipes to cook chicken ahead of time so that you can use it to make quick meals: Instant Pot Shredded Chicken, Crockpot Shredded Chicken and Poached Chicken.

Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts about four 6-ounce chicken breasts
  • salt and black pepper
  • 3 tablspoons olive oil divided
  • cup honey
  • ¼ cup smooth Dijon mustard
  • ¼ cup whole grain mustard
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon fresh thyme leaves
  • 2 cloves garlic minced
  • ¼ teaspoon black pepper
  • chopped fresh parsley optional, for garnish

Instructions

  • Preheat oven to 375° F.
  • Pat the chicken breasts dry and season both sides with salt and pepper.
  • Heat 1 tablespoon of the olive oil in a large cast iron skillet or other oven-safe skillet over medium-high heat.
  • Add the chicken breasts to the skillet and brown on both sides, about 3-4 minutes per side.
  • While the chicken browns, make the honey mustard sauce. In a medium bowl, combine the remaining 2 tablespoons olive oil, honey, smooth Dijon mustard, whole grain mustard, apple cider vinegar, fresh thyme leaves, minced garlic and black pepper. Whisk until well combined.
  • Once the chicken has browned on both sides, remove the pan from the heat. Spoon the honey mustard sauce over the chicken breasts in the skillet.
  • Place the skillet in the preheated oven. Bake chicken for 15-25 minutes, until chicken is cooked through. The center of the chicken should register 165° F on an instant read thermometer.
  • Serve chicken with sauce, garnishing with chopped fresh parsley, as desired.

Notes

  • If your chicken breasts are very large or an uneven thickness, you can pound them to thin them out to an even thickness. Or, slice large chicken breasts in half horizontally to get thin chicken cutlets.

Ingredients

Pico de Gallo*

  • ¾ pound ripe red tomatoes (plum/roma) 2-3 tomatoes, diced small*
  • cup finely chopped white onion
  • ½ cup chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • salt to taste

Cilantro Lime Rice

  • 2 teaspoons olive oil
  • 2 cloves garlic minced
  • 1 cup long grain white rice rinsed and drained
  • 1 ½ cups water
  • zest of 1 lime
  • 2 tablespoons fresh lime juice from 1 lime
  • cup chopped fresh cilantro
  • ¼ teaspoon salt or to taste

Chicken

  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • teaspoon black pepper
  • 2 boneless, skinless chicken breasts

Remaining Ingredients

  • 6 cups chopped romaine lettuce
  • 15 ounce can black beans rinsed and drained
  • 1 cup canned corn drained
  • 1 avocado peeled, pitted and sliced; or guacamole
  • sour cream, lime wedges optional, for serving

Instructions

  • Make the Pico de Gallo: Combine all ingredients in a medium bowl; stir. Set aside.
  • Make the Cilantro Lime Rice: Heat the olive oil in a medium saucepan over medium heat. Add the garlic and rice and toast for 3-4 minutes, stirring constantly. Stir in the water and bring to a simmer. As soon as the pot comes to a simmer, cover with a lid and reduce the heat to low. Cook at a very slow simmer without lifting the lid for 15 minutes. Then remove the pot from the heat and let the rice rest for 10 minutes with the lid on. Fluff the rice; stir in the lime zest, lime juice, cilantro and salt.
  • Prepare the Chicken: Meanwhile, combine the chili powder, paprika, cumin, garlic powder, salt and pepper in a small bowl. Stir or whisk to mix.
  • Place the chicken breasts in a zip-top bag or between two sheets of parchment paper and use a meat mallet or rolling pin to pound them to an even ½-inch thickness. Rub the seasoning mixture over all sides of the chicken breasts.
  • Grill chicken on an outdoor grill or oiled grill pan over medium to medium-high heat for 5-8 minutes per side, or until cooked through. Let the chicken rest for 5 minutes and then chop into bite size pieces.
  • Assemble the Burrito Bowls: Divide the lettuce evenly between 4 bowls (or meal prep containers). To each bowl, add cilantro lime rice, chicken, pico de gallo, black beans, corn, and avocado or guacamole.

Notes

  • To save time, instead of making homemade pico de gallo, you can use store-bought pico de gallo or salsa.
  • When making pico de gallo, remove the core, seeds and juice from the tomatoes so that they don’t water down pico de gallo.
  • These burrito bowls are perfect for meal prep. The grilled chicken, rice and pico de gallo will stay fresh for about 3 days stored in airtight containers in the refrigerator. You can also prep the lettuce, black beans and corn and store in the refrigerator. It’s best to assemble the bowls right before serving to keep everything fresh.

Ingredients

  • 2 large eggs
  • 1-2 pinches salt to taste
  • ½ tablespoon butter
  • filling ingredients as desired see notes below, such as cooked vegetables, cheese, fresh herbs, avocado, etc.

Instructions

  • If you are filling your omelet with vegetables that require pre-cooking (such as onions or bell peppers), sauté/cook those first and then set aside.
  • Crack the eggs into a small bowl, add a pinch or two of salt, and whisk vigorously, until the eggs are completely combined and uniform.
  • Heat the butter in an 8-inch nonstick skillet over medium-low heat. Once the butter has melted, use a small spatula to spread it out over the bottom and sides of the pan.
  • Pour the eggs into the skillet and let cook for 1 minute, without disturbing them. Once the eggs start to set around the edges, use a small spatula to carefully lift one edge of the omelet a bit, tilting the pan, so that the wet eggs can run over the edge and underneath the omelet. Repeat this a few more times, around the edges of the omelet, until no more liquid eggs are left on top.
  • Let the omelet continue cooking until the top is mostly set, reducing the heat to low if you feel that the bottom is browning too much before the top cooks to your liking. If needed, you can cover the pan with a lid to help the top cook through.
  • Add your desired filling ingredients on one half of the omelet. Fold the other side over to fold the omelet in half. Slide it onto your plate and enjoy!

Filling Ideas:
  • Veggie and Cheese: 2 tablespoons each of sautéed red onion, bell pepper and zucchini plus 1-2 tablespoons cheese (shredded cheddar or Monterey jack, crumbled feta or goat cheese).
  • Spinach Mushroom: 1/4 cup sautéed chopped mushrooms, 1/4 cup spinach (can wilt in skillet if desired), 1 tablespoon crumbled feta cheese.
  • Denver Omelet: 2 tablespoons each of sautéed onion and green bell pepper, 1/4 cup diced cooked ham, 2 tablespoons shredded cheddar cheese.
  • Avocado, Tomato and Cheese: 1/4 avocado (sliced), a few cherry tomatoes (halved), 2 tablespoons shredded cheddar cheese, 1 teaspoon chopped fresh chives.

Compared to ground beef recipes, ground turkey recipes are typically leaner but still pack in just as much flavor. When you’re shopping at the grocery store, I recommend choosing ground turkey with a little fat in it for both moisture and flavor. I like to use 93% lean ground turkey. (99% lean tends to cook up too dry.)

Ingredients

  • avocado oil or canola oil for greasing the baking sheet
  • 1 egg
  • ¼ cup very finely chopped yellow onion
  • 2 cloves garlic minced
  • ¼ cup panko bread crumbs
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons ketchup
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 pound ground turkey*

Instructions

  • Preheat oven to 450° F. Grease a rimmed baking sheet with avocado oil or canola oil.
  • In a large mixing bowl, combine the egg, onion, garlic, panko, Parmesan cheese, ketchup, Worcestershire sauce, Italian seasoning, garlic powder, salt and pepper. Stir with a fork to mix.
  • Add the ground turkey and mix until just combined.
  • Use your hands to shape the meat mixture into 1 ½-inch meatballs. Place on the greased baking sheet.
  • Bake meatballs for 10-14 minutes, until they are cooked through. Meatballs are done when they register 165° F in the center when measured with an instant read thermometer.

Notes

  • For best results, use ground turkey with a little bit of fat in it, such as 93% lean. Using 99% lean ground turkey may make the meatballs dry.
  • Baked meatballs may be stored in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months.

My personal favorite, roasted broccoli has irresistible golden brown caramelized edges that make it so flavorful. It’s crispy on the edges, perfectly tender in the middle, and so good you’ll want to eat the whole batch straight from the pan! You won’t have to watch a pot on the stove (a bonus for us moms who are often taking care of kids while we make dinner). I like to season this Instant Pot broccoli with a squeeze of fresh lemon juice and some grated Parmesan cheese. Everyone at the table will be asking for a second helping!

Storage and Prep Tips

  • Store raw broccoli in a plastic bag in the refrigerator for about a week. To keep it fresh for longer, don’t wash broccoli until right before you cook it.
  • Cooked broccoli can be stored in an airtight container in the refrigerator for about 3 days.
  • When you cut broccoli, try to keep as much of the broccoli stems on as possible. The stems are a good source of fiber. (You can use them to make Broccoli Slaw!) If desired, you can use a vegetable peeler to peel off the tough outer layer of the broccoli stalk.
  • For the best tasting broccoli, cook it until it is just crisp-tender. Bright green broccoli has a fresh flavor and great texture. If your broccoli turns mushy or loses its vibrant color, it is likely overcooked.

Broccoli Seasoning Ideas

A few simple seasonings can add a pop of flavor to your broccoli to make it even more tasty. Here are some ideas:

  • Simple: A pat of butter or a drizzle of olive oil, plus salt and pepper are easy ways to add flavor.
  • Cheesy: Sprinkle on grated Parmesan cheese or serve your broccoli with cheese sauce.
  • Olive Oil & Lemon: A simple, yet so delicious combination! Use either lemon juice or lemon zest.
  • Italian: Drizzle on extra virgin olive oil and then sprinkle on Italian seasoning, Parmesan cheese, salt and pepper.
  • Garlic Butter: Spread some garlic butter on broccoli for a buttery, garlicky treat.
  • Sesame: Try a splash of soy sauce and a sprinkle of sesame seeds.

How to Cook Broccoli {5 Easy Ways}

Learn how to cook broccoli so that it is crisp-tender and flavorful. This easy, healthy side dish is a family favorite! See the notes section below for broccoli seasoning ideas.

Ingredients

Steamed Broccoli

  • 1 ½ pounds broccoli cut into florets

Roasted Broccoli

  • 1 ½ pounds broccoli
  • 2 tablespoons olive oil
  • salt and pepper to taste

Sautéed Broccoli

  • 1 pound broccoli crowns
  • 1 ½ tablespoons olive oil
  • ¼ cup water
  • 3 cloves garlic minced
  • ¼ teaspoon Kosher salt or sea salt to taste
  • black pepper to taste
  • zest of 1 lemon

Air Fryer Broccoli

  • 1 pound broccoli
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1 tablespoon water
  • 2 tablespoons grated Parmesan cheese

Instant Pot Broccoli

  • 1 ½ pounds broccoli cut into florets
  • 1 cup water

Instructions

Steamed Broccoli

  • Put 1-2 inches of water in the bottom of a pot. Put a steamer basket in the pot. (If you do not have a steamer basket you can cook the broccoli directly in an inch or two of water in the pot.) Bring to a boil on the stove.
  • Once boiling, add the broccoli to the steamer basket (or right to the water in the pot), cover with a lid, and reduce the heat to medium. Cook for 3-4 minutes for crisp-tender broccoli or 5-7 minutes for softer broccoli.
  • Once the broccoli is cooked to your liking, immediately remove it from the heat and take the lid off of the pot. Use a slotted spoon to carefully transfer the broccoli to a serving dish. Season as desired and serve.

Roasted Broccoli

  • Preheat oven to 400° F. Line a baking sheet with parchment paper.
  • Wash the broccoli and dry it well. Cut broccoli into bite-size florets. Cut larger florets in half or even into quarters if very large. Place broccoli florets on the baking sheet and drizzle with the olive oil. Toss to coat.
  • Arrange broccoli so that any flat cut sides are facing down on the baking sheet and so that there is some space between the pieces to allow air to circulate. Sprinkle on salt and pepper.
  • Roast broccoli in the preheated oven for 15 minutes. Stir/toss broccoli, spread out into an even layer again, and continue roasting for 3-8 more minutes, until tender and browned on the edges.

Sautéed Broccoli

  • Cut the broccoli into florets. Then cut all but very small florets in half. Quarter any very large florets. Pat dry to remove any moisture on the broccoli.
  • Heat the olive oil in a large cast iron skillet or other heavy skillet over medium heat. Once hot, add the broccoli to the pan. Use kitchen tongs to turn the pieces so that the flat sides are down against the bottom of the pan. Cook, without stirring, for 3-4 minutes. Then stir the broccoli and continue to cook for 2 minutes, stirring often.
  • Pour in the water and immediately cover the pan. Cook for 2 minutes. Uncover the pan and stir in the minced garlic. Cook, stirring, for 30 seconds. Remove the pan from the heat.
  • Sprinkle the salt, pepper and lemon zest over the broccoli. Stir to distribute. Serve immediately.

Air Fryer Broccoli

  • Cut the broccoli into florets. Cut large florets in half and very large florets in quarters. The pieces should be approximately 1-inch in size. Place broccoli florets in a bowl. Drizzle the olive oil over the broccoli. Toss to coat. Sprinkle on salt and pepper and toss to evenly distribute.
  • Add 1 tablespoon water to the bottom of the air fryer. Place broccoli in a single layer in the air fryer (cook in batches if needed). Air fry at 370° F for 5 minutes. Then toss broccoli and sprinkle on Parmesan cheese. Air fry for 3-5 more minutes, until broccoli is crisp-tender. If cooking a second batch, add another tablespoon of water to the bottom of the air fryer first.
  • Serve immediately, seasoned with more salt, pepper and/or Parmesan as needed, to taste.

Instant Pot Broccoli

  • Pour 1 cup of water into the Instant Pot inner pot. Add a steamer basket to the pot. Place broccoli florets in the steamer basket. Close the Instant Pot lid and set the steam release valve to the sealing position.
  • For crisp-tender broccoli, set the pressure cook time to 0 minutes at high pressure. (If your Instant Pot will not allow you to set a 0 minute cook time, you can set it to pressure cook for 1 minute and then cancel the cooking cycle as soon as the pot reaches pressure. Then immediately quick release.) For softer broccoli, set the pressure cook time to 1 minute at high pressure.
  • The Instant Pot will take about 10 minutes to reach pressure and then the cook time will begin. As soon as the cook time ends, quick release the pressure by carefully moving the valve to the venting position.
  • Once all of the steam has escaped and the pin drops down, immediately open the pot (to prevent over-cooking). Season broccoli as desired and serve.

  • 10 ounce can diced tomatoes with green chilies* such as RO*TEL
  • 8 ounces elbow macaroni pasta whole wheat or white
  • 15 ounce can black beans rinsed and drained
  • 15 ounce can red kidney beans rinsed and drained
  • 2 cups water
  • 2 cups shredded cheese cheddar, Monterey jack, mozzarella, or a combination

Instructions

  • Heat the olive oil in a large skillet* or pot over medium heat. Add the onion, bell pepper and carrots and cook until softened, stirring occasionally, about 6 minutes.
  • Add the garlic, chili powder, cumin, and salt to the pan with the vegetables and cook, stirring, for 30 seconds.
  • Stir in the diced tomatoes, diced tomatoes with green chilies, pasta, black beans, kidney beans and water. Stir.
  • Increase the heat to medium-high and bring to a simmer. Reduce the heat to a low simmer, cover, and cook, stirring every few minutes, until pasta is tender and most of the liquid has been absorbed, about 12-15 minutes.
  • Remove the pan from the heat and stir in most of the cheese, reserving a little for sprinkling on top. Sprinkle on the remaining cheese. Serve.

Notes

  • You will need a skillet or pot that is at least 12 inches wide and 2 inches deep to fit the full recipe.
  • This recipe makes a chili mac with some spice to it. The spice is not overwhelming, but if your family prefers less spice I’d recommend using mild diced tomatoes with green chilies or subbing with a can of diced tomatoes without green chilies (fire roasted diced tomatoes would be delicious). To make the chili mac spicier, add a small amount of cayenne pepper or crushed red pepper flakes along with the other seasonings. 
  • To add meat to this recipe, add ground beef or ground turkey to the pan after sautéing the onion, carrots and bell pepper for a few minutes. Cook the meat, crumbling, until browned and then proceed with the recipe.

How to Make Juicy Pork Chops

Follow these tips to ensure that your pork chops turn out incredibly juicy and tender, every time.

  • Choose thick-cut pork chops whenever possible. They’ll be less likely to dry out when cooking.
  • Bone-in pork chop recipes vs. boneless pork chop recipes: Follow the tips in the recipe you’re making. As a general rule, bone-in pork chops will be more juicy than boneless because the bone helps to keep the meat from drying out. Boneless pork chops cook more quickly.
  • Don’t overcook them! Overcooking pork chops is a sure-fire way to dry them out. How long to cook pork chops is going to depend on your cooking method and the thickness of the pork chops.
  • Use an instant read thermometer to check when pork chops are done. The internal temperature of pork chops should be 145 degrees F after cooking, according to the USDA.
  • Let them rest for 5 minutes before slicing or serving. This allows the juices to redistribute throughout the meat; otherwise the juices will run out all over the plate or cutting board.
  • Use a pork chop marinade or pork rub to add flavor.

Best Juicy Pork Chop Recipes

Ingredients

  • 1 teaspoon kosher salt
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • teaspoon cayenne pepper or to taste
  • cup all-purpose flour
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter divided
  • 2 bone-in pork chops at least 1-inch thick, see note for boneless
  • 1 teaspoon fresh thyme

Instructions

  • In a small bowl, stir together the salt, paprika, garlic powder, onion powder, black pepper and cayenne.
  • Place the flour in a wide, shallow dish.
  • Heat the olive oil and 1 tablespoon of butter in a large skillet, such as a cast iron skillet, over medium-high heat.
  • Pat the pork chops dry with paper towels. Rub the seasoning mixture over the pork chops. Coat pork chops in the flour and add them to the hot pan. (Cook in batches or use two pans if they won't all fit in the pan at once.)
  • Cook the pork chops for 2 minutes on each side to get a nice golden brown sear. Then reduce the heat to medium, flip and continue cooking for 5-10 more minutes per side, or until the pork chops register 145° F in the center when measured with an instant read thermometer. Be careful to not overcook them as this will dry them out. (If your pork chops are thin they will likely cook in less than 5 minutes per side.)
  • When the pork chops are almost cooked through, add the remaining 1 tablespoon of butter and the fresh thyme to the pan. Allow the butter to melt. Remove the pan from the heat. Spoon the butter and thyme sauce over the pork chops.
  • Let pork chops rest for 5 minutes before serving.

Notes

  • Two large bone-in pork chops will provide 2 large servings or 4 smaller servings. You can use 4 pork chops to serve more people. You may need to cook them in two batches if they won’t all fit in the pan.
  • To use boneless pork chops, keep a close watch on them so that they don’t overcook and dry out since boneless chops cook faster. Using thick cut pork chops (at least 1-inch thick) also helps to prevent them from drying out.

Ingredients

  • 2 teaspoons brown sugar
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt
  • teaspoon black pepper
  • 2 boneless, skinless chicken breasts
  • 1 teaspoon olive oil

Instructions

  • In a small bowl, combine the brown sugar, paprika, dried oregano, garlic powder, onion powder, salt and pepper. Stir until well combined.
  • Pat the chicken dry with paper towels. Place chicken breasts in a zip-top bag or between two layers of parchment paper and use a meat mallet or rolling pin to pound them to an even thickness.
  • Rub the olive oil over the chicken. Then rub the spice mixture on both sides of the chicken breasts.
  • Place chicken in a single layer in the air fryer. Cook at 400° for 8 minutes, then flip chicken over and continue cooking for 5-12 more minutes, or until the internal temperature of the chicken is 165° F at the thickest part of the breast. (The cook time will depend on the size of your chicken breasts.)
  • Let chicken rest for 5 minutes before slicing and serving.

Best Instant Pot Recipes

Instant Pot recipes can help you to get healthy meals on your table without a lot of effort. I use my Instant Pot many times per week, to cook dinner, to make Instant Pot oatmeal for breakfast, or to cook perfect Instant Pot hard boiled eggs.

When I shared this list of healthy Instant Pot recipes, I never imagined how popular they would become. Today I’m sharing more of the best Instant Pot recipes to give you even more easy meal ideas. These recipes are perfect for beginners and anyone who loves good food.

What is an Instant Pot?

An Instant Pot is an electric pressure cooker. It’s a multi-cooker, which means that it has many cooking functions. You can sauté in the Instant Pot or use it as a slow cooker, rice cooker, steamer or yogurt maker. I use the Pressure Cook/Manual and Sauté buttons on my Instant Pot most often.

Why Instant Pot Recipes?

  • Flavor! The number one reason why I love to cook with an Instant Pot is FLAVOR. Something magical happens with pressure cooking: the best flavors develop and meats become incredibly tender. If you need more convincing, try my recipes for Instant Pot chili or cook a rotisserie chicken in your Instant Pot. Both are unbelievably tasty.
  • Hands-off cooking. Another huge benefit of Instant Pot cooking is that most of the cook time is hands-off. Once you get your ingredients in the pot and set it to pressure cook, you won’t have to do anything else until the cook time has finished. There’s no stirring a pot on the stove or checking on food in the oven.
  • Easy Instant Pot recipes. One of the best things about Instant Pot recipes is that they help to take the guesswork out of cooking. Best Instant Pot Recipes: Pot Roast

Ingredients

  • 3 pound boneless beef chuck roast
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 large yellow onion coarsely chopped
  • 4 cloves garlic minced
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 ½ cups low sodium beef broth
  • 4 sprigs fresh thyme or 1 teaspoon dried thyme
  • 6 medium carrots cut into 1-inch pieces
  • 1 ½ pounds whole baby potatoes
  • 2 tablespoons cornstarch optional, for thickening gravy
  • 2 tablespoons water optional, for thickening gravy

Instructions

  • Cut the beef roast in half.
  • Season the beef on all sides with the salt and pepper.
  • Heat the oil in the Instant Pot using the sauté function until hot.
  • Place the beef in the pot and brown, 3-4 minutes per side. Transfer to a clean plate.
  • Add the onion to the pot. Cook until softened and lightly browned, stirring often, about 4 minutes. Stir in the garlic and turn off the Instant Pot.
  • Add the tomato paste, Worcestershire sauce and beef broth. Stir well and scrape up any browned bits that are stuck to the bottom of the pot.
  • Put the beef back in the pot. Add the fresh thyme sprigs or dried thyme.
  • Close the Instant Pot lid and move the steam release valve to the sealing position. Pressure cook on high pressure for 60 minutes. When the cook time ends, allow the pressure to release naturally for 10 minutes and then quick release any remaining pressure by moving the valve to the venting position.
  • Open the Instant Pot lid and add the carrots and potatoes on top of the beef. Close the lid, seal the pot, and pressure cook for 5 more minutes on high pressure. Then let the pressure naturally release for 10 minutes. Quick release any remaining pressure.
  • Remove the beef and vegetables from the pot, leaving the juices in the pot. Discard the fresh thyme stems. Use two forks to shred the roast into chunks.
  • Thicken the juices in the pot (optional): Turn on sauté. Stir together 2 tablespoons each of cornstarch and water and then stir into the liquid in the Instant Pot. Cook, stirring occasionally, until gravy has thickened slightly.

Notes

  • If your roast is larger than 3 pounds, add 10 minutes per pound to the pressure cook time.
  • To cook pot roast from frozen, skip the step of browning the meat. Pressure cook a frozen 3 pound beef chuck roast for 90 minutes, followed by a 10 minute natural pressure release. Then add your potatoes and carrots and pressure cook for 5 minutes more, plus 10 minutes natural release. If your roast is larger than 3 pounds, add 10 minutes per pound to the first pressure cooking time.

Ingredients

  • 16 ounces rotini pasta
  • 1 tablespoon olive oil
  • 1 small yellow onion chopped
  • 2 large carrots chopped into ¼-inch pieces
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 pound ground beef
  • 4 cloves garlic minced
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 15 ounce can tomato sauce
  • 15 ounce can diced tomatoes
  • 8 ounces shredded cheddar cheese 2 cups, divided

Instructions

  • Preheat oven to 350° F. Lightly grease a 9×13-inch baking dish and set aside.
  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Drain pasta into a colander, rinse, drain well and set aside.
  • Meanwhile, in a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion, carrots and bell peppers. Cook, stirring often, until carrots are tender, about 8 minutes.
  • Move the veggies to the edges of the pan and add the ground beef. Increase the heat to medium-high. Cook the beef, crumbling, until browned. Drain off any excess grease.
  • Add the minced garlic, Italian seasoning, garlic powder, salt and pepper. Cook, sitrring, for 30 seconds.
  • Stir in the tomato sauce and diced tomatoes.
  • Remove the pan from the heat. Then stir in ⅓ of the shredded cheese, followed by the cooked pasta.
  • Transfer to the prepared baking dish. Sprinkle the rest of the cheese over the top of the casserole.
  • Bake, uncovered, for 20 minutes, until the cheese is melted and lightly golden brown.

Notes

  • You can substitute your favorite vegetables in this recipe. Frozen veggies such as peas, corn, green beans or carrots can be stirred in along with the diced tomatoes.
  • Hamburger casserole may be stored in the refrigerator for up to 24 hours before baking, or in the freezer for up to 3 months. Thaw for 24 hours in the refrigerator before baking. You may have to add 15-20 minutes to the bake time if baking a chilled casserole. Cover it with foil if it is browning too much in the oven.
  • Store leftover baked casserole in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months.

Ingredients

  • 3 tablespoons olive oil
  • 1 medium yellow onion chopped
  • 3 medium carrots chopped
  • 3 ribs celery chopped
  • 4 cloves garlic minced
  • 1 ½ teaspoons dried oregano
  • 1 ½ teaspoons dried thyme
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste
  • 6 cups low sodium vegetable broth
  • 2 cups chopped Yukon gold potatoes ½-inch pieces, approximately 2 medium or ½ pound potatoes
  • 1 cup chopped green beans
  • ¼ cup tomato paste
  • 28 ounce can fire roasted crushed tomatoes
  • ¾ cup dry short pasta shapes such as small shells, ditalini or elbow pasta
  • 15 ounce can red kidney beans, cannellini beans or Great Northern beans rinsed and drained
  • lemon juice, red pepper flakes or grated Parmesan cheese optional, for serving

Instructions

  • Heat the olive oil in the Instant Pot using the sauté function. When the pot is hot, add the chopped onion, carrots and celery. Cook, stirring often, until the vegetables soften, about 5 minutes.
  • Add the minced garlic, dried oregano, dried thyme, salt and pepper and cook, stirring, for 30 seconds. Turn off the Instant Pot.
  • Pour in the broth and stir, scraping up any bits stuck to the bottom of the pot. Add the potatoes, green beans, tomato paste and fire roasted crushed tomatoes. Stir.
  • Close the Instant Pot lid and move the valve to the sealing position. Set the pressure cook time to 4 minutes at high pressure. The Instant Pot will take about 25 minutes to reach pressure and then the cook time will begin counting down.
  • Meanwhile, cook the pasta in a pot on the stove, according to the package directions for al dente. Rinse and drain the cooked pasta.
  • When the cook time on the Instant Pot ends, allow the pressure to release naturally for 5 minutes by leaving the Instant Pot alone. Then quick release the remaining pressure by carefully moving the valve to the venting position (I use the handle of a long spoon to do this). Once all of the steam has escaped and the pin drops down, carefully open the Instant Pot lid.
  • Stir the beans and cooked pasta into the soup. Taste and season with additional salt and pepper if needed. If desired, serve the soup with a squeeze of fresh lemon juice or a small pinch of red pepper flakes, to taste. Serve with grated Parmesan cheese, if desired.

Notes

  • You must use a 6 quart or larger Instant Pot for this recipe. The 6 quart pot will be very full, but the soup shouldn’t exceed the max fill line. I do not recommend doubling this recipe as a double recipe will not fit in the Instant Pot.
  • Leftover soup may be stored in the refrigerator for up to 4 days or in the freezer for up to 3 months. Let the soup cool before storing, and refrigerate the soup within two hours of making it.

Thanksgiving Bread Recipes

With these amazing bread recipes, you won’t be tempted to pass on the homemade rolls (or biscuits or cornbread) this Thanksgiving. Store-bought doesn’t come close to these homemade recipes.

  • Drop Biscuits: If biscuits are one of your go-to Thanksgiving recipes, you’ll love this recipe. Even easier than our traditional biscuit recipe, these drop biscuits are tender and buttery.

45 Thanksgiving Side Dishes: Stuffing Recipe

The best Thanksgiving Side Dishes for your holiday meal, all in one place! These delicious recipes include casseroles, sweet potato recipes, green beans, mashed potatoes, roasted vegetables, salads and more. This easy homemade stuffing is made with fresh herbs, onion, celery and plenty of butter!

Ingredients

  • 1 pound day old French baguette or French bread* cut into ¾-inch cubes, about 16 cups bread cubes
  • ¾ cup unsalted butter
  • 1 ½ cups chopped yellow onion
  • 1 ½ cups chopped celery
  • 3-4 cloves garlic minced
  • ¼ cup chopped fresh parsley
  • 2 tablespoons chopped fresh sage
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 ½ cups low sodium chicken broth plus more as needed
  • 1 large egg

Instructions

  • Preheat oven to 250° F. Place the bread cubes on two rimmed baking sheets. Place bread in the oven for 15 minutes, stirring and rotating the pans halfway through the cook time, until the bread cubes are dried out but not browned. Remove from oven and set aside. (Alternatively, you can let the bread cubes sit in a loosely covered bowl on the counter for 24 hours to dry them out.)
  • Increase the oven temperature to 350° F. Lightly grease a 9×13-inch baking dish.
  • Place the butter in a large Dutch oven or large skillet over medium high heat. Once the butter is melted, add the onion and celery to the pan. Sauté, stirring occasionally, until the vegetables have softened, about 6 minutes.
  • Add the garlic, parsley, sage, rosemary, thyme, salt and pepper to the pan and cook, stirring, for 1 minute. Remove pan from heat.
  • In a liquid measuring cup or medium bowl, whisk together the broth and the egg.
  • If the bread cubes will fit in the pot with the onion, celery and herbs, add them to the pot and stir to combine. If not, place the bread cubes in a large bowl and add the contents of the pot to the bowl; stir.
  • Pour the broth/egg mixture over the bread cubes and stir. The bread should be moist but not soggy. If it is still very dry, stir in a little more broth, until all of the bread cubes are lightly moistened. If you like your stuffing more moist, you will want to add more broth than the 1½ cups listed in the recipe, as this amount yields a drier stuffing.
  • Pour the mixture into the prepared baking dish and spread into an even layer. Cover the dish with foil and bake for 30 minutes. Then uncover and continue baking for 15-25 more minutes, or until stuffing is browned on top and at least 160° F in the center when tested with an instant read thermometer.

Notes

  • You can also use store-bought stuffing bread cubes, which are already dried out.
  • Make Ahead Instructions: You can prepare the stuffing up to 2 days ahead and bake it at 350° F, covered, for 30 minutes, or until it reaches 160° F in the center. Cool and then cover and refrigerate. When you’re ready to serve the stuffing, bake it at 350° F, uncovered, until heated through and browned, about 30-40 minutes. If it is browning too much yet not hot in the center, cover the dish with foil.
  • Alternatively, you can do some of the prep work one day ahead and then mix everything together right before baking. One day ahead: Cube and dry the bread. Then sauté the vegetables, followed by the garlic, herbs, salt and pepper. Let the vegetable mixture cool and then store in an airtight container in the refrigerator. Store the bread at room temperature. The day of: Mix together the bread and the sautéed veggie/herb mixture and then stir in the egg/broth mixture right before baking. Bake as directed in the recipe.

Something I look forward to most when the weather turns cool in the fall is soup season. When it’s cold and dreary outside, nothing warms you up at the end of a long day quite like a bowl of soup! I’ve created so many homemade soup recipes over the years that I decided to collect all of our favorites together in one place.

Most of these soups come together in one pot for easy dinner prep and clean up. They reheat wonderfully for lunch or dinner the next day, and many of them freeze well too. Hello, cozy comfort food!

Chicken Soup Recipes

Nothing says homemade comfort food like a bowl of chicken soup. These chicken soups are warm and nourishing, filled with chicken and vegetables, plus noodles or rice.

When I’m feeling under the weather, a bowl of this Chicken Noodle Soup always seems to make me feel better. This classic soup has tender bites of chicken, egg noodles and vegetables in a flavorful broth, plus fresh herbs to brighten up the flavors. Everyone needs a classic Vegetable Soup recipe in their collection, and this is mine. I add both sweet potatoes and Yukon gold potatoes for flavor variety.
