This farro salad is delicious. I have made it several times since discovering it a couple months ago. I have substituted spinach for the arugula because I always have it on hand for salads. Otherwise followed the recipe as written. I have been introducing farro and bulgur to my bf (he had no idea what either were) and this is one of his favorite recipes also. Thank you for sharing!
