Of course I did overcook the chops by about 5 minutes(I usually do) but they were still tasty and not too dry. I would definitely make again but I would use bone-in chops instead.

Hi Bertha, The trick is to use an instant read thermometer to test when the pork chops are done and take them out of the oven immediately. If they are even slightly overbaked, they get tough. I’m glad you enjoyed the flavors in this recipe.

Made this yesterday and it was a big hit. Chops were juicy and very flavorful. Baked them for exactly 15 minutes and they were perfect. Only thing I did different was I swapped out rosemary for thyme. Not a fan of thyme. Thank you for a great, fool proof recipe

Made this tonight for my Mom and son. It was perfect with pork loin chops. We all loved it. I served with a side of cold, sliced beets that I had cooked and chilled earlier in the day and a fresh spinach salad with lots of veggies and balsamic vinaigrette dressing. In the fall, I would serve with baked acorn squash and rice pilaf, couscous or quinoa.
